Venison with Steak Dust and GastriqueThis is a long winter, good thing I have WildSeason on my spice rack. Venison loin for dinner tonight with kosher Steak Dust, it forms a wonderful, crusty, sea salt surface on the meat. Add to the pan drippings a bit of  honey, let it carmelize and deglaze with good quality Apple vinager. Gastrique’ from the earth.
